| Abstract: |
| The technology and equipment for processing fenugreek endosperm splitsare described in this paper. The seeds are expanded rapidly through adding some heat water and then are toasted. Wherein the components of the seed are separated by multi-stagegrinding and sifting operations. The extraction rate of endosperm splits from the seeds isover 90%. The pure rate is greater than 95%. The viscosity of fenugreek gum is between4000 and 5000 mPa.s. The content of water-insoluble substances is below 5%. |
